Cooking with Mason

So last week I was cooking supper and Mason was sitting in the floor looking at a cookbook. He found a recipe with shrimp that he wanted me to cook so I told him we would get the ingredients and we would cook it together. He loves to cook. So all week he's been asking if we could make his shrimp but I kept having to tell him we didn't have the stuff that we needed yet. Thursday night we finally made it to the grocery store and got everything and I told him we would make it last night. I thought I would share it.





The recipe was called Shrimp Monterey. It was super easy and delicious. I will definitely be cooking it again. The only change I would make would be to add a little more chicken broth in it so that the sauce was a little soupier. Oh, and if you notice the cheese looks really orange that's because I had to get shredded Monterey Jack and cheddar together. I couldn't find just plain Monterey Jack cheese. I served this over pasta but I'm sure you could do it over rice too. I have provided the recipe below for those of you who actually cook. :o)

Shrimp Monterey
2 garlic cloves, minced
2 tablespoons butter
2 pounds uncooked medium shrimp, peeled and deveined
1/2 cup white wine or chicken broth
2 cups shredded Monterey Jack cheese
2 tablespoons minced fresh parsley

In a skillet over medium heat, saute garlic in butter for 1 minute. Add shrimp; cook for 4-5 minutes or until pink. Using a slotted spoon, transfer shrimp to a greased 11-in. x 7-in. x 2-in. baking dish; set aside and keep warm. Add wine or broth to the skillet; bring to a boil. Cook and stir for 5 minutes or until sauce is reduced. Pour over shrimp; top with cheese and parsley. Bake, uncovered, at 350 degrees for 10 minutes or until cheese is melted.

My Baby is 3

Today is Mason's third birthday. We had his party Friday night. Thanks to all the family and friends who made it out and shared in this special night. Mason was so excited. Every time someone would come in the door he would run up to them and say "It's my birthday party". He kept saying "I'm excited" too.

The Best Christmas Present Ever

I finally got to use the Christmas present Tim got me. He got me a "Day of Beauty" at Isis Medispa in Albertville. It was W-O-N-D-E-R-F-U-L! I got there and they started by giving me an hour facial. Then, I had an hour massage.




After that they fed me lunch. I felt so pampered. Lunch was exceptional. Then, I had a pedicure and manicure. Afterwards, they washed my hair and styled it for me. Needless to say I was ready for a night out with my husband. I told him I wasn't getting pampered all day for nothing so he took me out to eat at Red Lobster.

It Snowed!

I know. I'm a little late on this post. It snowed two days ago and I'm just now getting my pictures up.






Sadly this was the first time that its REALLY snowed in the almost three years that Mason has been here and he was sick and didn't get to go outside and play in it. So, I brought the snow inside to him so he could at least build a snowman.







These are a few pictures I took Friday afternoon after we got home around our house. We had about 2 1/2 inches. How many did you have?





These are a couple I took Saturday morning on the way to my parent's house. Yes, I was one of the crazy people stopped in the road taking pictures. But really, how many times do you get to take pictures like that around here.

Happy Birthday to . . . .

ME! So Friday is my official birthday. I've been hinting around to my husband that it was coming up because he can't remember dates for the life of him so I just happened to mention that him and Mason should make me a cake. When he asked me what my favorite cake was I said chocolate with peanut butter icing but I told him whatever was in the cabinet would be fine. When I got home this afternoon they were making me a cake. I know it's a little early but he didn't want to miss it he said. :o)








So it's a little lopsided and the icing is running off but no other cake has been made with more love. They even bought a Hershey's bar and shaved it to put on the icing. It's the thought that counts and I think it's the best birthday cake I've ever had because it was made by my two boys. Love y'all!
